Vernal Gin Fizz
As we transition from winter to spring, this cocktail bubbles over with herbal effervescence, fulfilling springs vernal promise of renewal, while hinting and the sultry and celebratory sojourn to arrive in the months to come.

- Combine fennel fronds, coconut water, pineapple juice in a shaker.
- Muddle well. Then add simple syrup, egg white, and 2 oz gin.
- Add ice to shaker and shake vigorously and strain into chilled glass. Top with chilled soda water.
- Garnish with candied ginger, a fennel frond, and a dash of bitters on the white froth.
