When we first heard about Jefferson's Ocean-aged Bourbon, we were instantly excited. Already a great-tasting product, the idea of an added element -- one so simple, yet wildly unpredictable -- was quite intriguing. This isn’t a distillery that needed to play games or create exta buzz for approval; this isn’t a gimmick, it’s ingenious.
To offer a bit more about the added sea element: Jefferson's takes their well-aged (land) bourbon, puts it on a Steve Zissou-esque sea vessel and sends it on an aquatic voyage for six months. Why, you ask? For one, the barrel contents are subjected to a wide range of barometric pressure and temperature shifts, giving the aging juice unique characteristics and transformations they wouldn't get from just hanging out in a warehouse. Second, instead of getting sea sick, these swishing, sloshing spirits meld with the oaky goodness of their barrels. Third, that cold, stiff ocean air slightly pervades the subtly porous wood, giving just a small hint of a nautical smell that’s hard to put your finger on. For our money, it smells like a dock in the summer sun.
This is a well aged bourbon, so expect the similar richness of Jefferson’s regular bottle, but with an added complexity. The ocean voyage adds a unique profile, not just in terms of nose, but taste and even mouth feel. Big punches of cinnamon, tobacco, and vanilla are met with a spicy (briny) finish on this limited-edition experiment of a whiskey.
